

Today is the first snow, time to get all cuddled up at home with a tea and some Christmas cake!
Recipe
Cake:
6 squares semisweet chocolate, chopped
10 eggs, separated
175 g white sugar
2 cups ground almonds (This cake uses ground almonds to replace the wheat flour)
*instead you can also use a chocolate cake mix.
Melt chocolate in top of double boiler; set aside.
Beat egg yolks until thick . Gradually beat in sugar. Blend in chocolate and almonds.
Beat egg whites until stiff peaks form. Fold whites into chocolate batter. Spoon batter into an ungreased 10 inch round pan.
Bake at 350 degrees F (175 C) for 1 hour, or until cake springs back when lightly touched. Remove from oven, invert pan, and cool 20 minutes before removing from pan. Cut in three layers.
Filling:
500 g Mascarpone cheese
500 g Curd cheese (german: Quark)
1 Pck. Vanilla sugar
2 tbsp Sugar
2 Oranges
Mix Mascarpone, Quark, Vanilla sugar and sugar. Take the juice of two oranges and fold it under the mix.
Topping:
1 Starfruit
Box of red current
Take the first chocolate cake layer and add some mascarpone cream and sprigs of red current on top. Repeat three times. Cut starfruit in slices, take a bunch of red current and lay on top of the last layer.
Red current is a nice alternative to cranberries, you can also make Christmas ice cubes with them;-)
